Tomato Mozzarella Salad With Fresh Peaches
Here’s a refreshing twist on the old standard-and the delectable taste is not surprising, since many foods that share the same growing season enjoy being on the same plate.
- 2 large tomatoes, chunked
- 2 ripe peaches, pitted and chunked
- 2 tbsp. chopped red onion
- 1 1/2 cups mozzarella cheese, chunked
- ¼ cup chopped fresh basil
- 1/3 cup Tomato-Honey Dressing
Toss tomatoes, peaches, onion, cheese and basil together. Add dressing and gently mix.
Tomato-Honey Dressing (It’s ideal for dressing up steamed green beans or zucchini)
- ½ cup tomato infused olive oil
- 1 clove peeled, smashed and minced garlic
- 1 tsp. honey
- 2 tsp. fresh lemon juice
- 1 tbsp. chopped parsley
Blend and pour over salad. Then gently mix.
