Saving Meals with a Muffin Tin

Grace is 3. 3 is about finding your independence, right?

Don’t tell me if that’s not the case. It’s certainly the case at my house.

We are having such a hard time convincing Grace to eat these days. It’s unreal.

It’s not that she refuses to eat everything. She happily eats ice cream, blueberry cereal bars, oatmeal, and fruit.

Oh, and sour cream and butter. She’ll happily eat sour cream and butter with a spoon and fork.

No, we don’t let her.

Sometimes she’s quicker than we are.

If it looks like supper? Forget it.

So… muffin tins have come to my rescue.

Recently, I have been deconstructing whatever pasta dish or casserole we’re having and putting the components into a muffin tin.

She happily gobbles it up when I serve it that way, and it only takes a minute or two to pick everything apart and drop it into the wells.

This Muffin Tin Meal started out as Garden Pasta. I always use whatever veggies I have on hand to make Garden Pasta. This time, it happened to be yellow squash, zucchini, carrots, and broccoli.

  • Bottom left and bottom right – Penne pasta
  • Bottom center – Yellow squash
  • Top left – Broccolieating-a-muffin-tin-meal
  • Top center – Zucchini
  • Top left – Carrots
  • Pink flower cup – Grated Parmesan cheese (We top our pasta with this, but I gave it to Grace in a cup in case she wanted to eat it separately.)

The biggest hit of this particular meal was the little animal picks. A friend sent them to me, and Grace used them as utensils, eating the pieces right from the picks. It made me laugh.

And it made her eat.
